Amazake Factory

Masato Yaginuma-san is the 3rd generation of traditional japanese fermented food maker, ranging from the 100 year rice malt miso to traditional amazake. His grandprarents uses water from the mountain or springs. Today, Horaiya Honten factory's productions are using Dileka™ water to produce the traditional drinks and food.

Asahi Shuzo Fine Sake Factory

Kubota Manju is produced by a brewery known as Asahi Shuzo in the Niigata prefecture of western Japan, and it may well be the most well known fine sake in the world. Asahi Shuzo was founded in 1830 and is the largest producer in Niigata prefecture, and therefore one of the largest producers in all of Japan.

Kubota, which bears the name “Kubotaya”, the name of the shop at the time of its founding, is a highly popular sake regardless of age or gender, with a light, dry, soft taste, depth and richness.

Asahi Shuzo’s master brewer said, “The quality of sake cannot exceed the quality of sake rice,” and that they also focus on making sake rice with the motto, “Sake brewing is from rice making.”

Another important ingredient is water.

Asahi Shuzo installed DILEKA in the productions factory.

The soft ionized Dileka water is used for the sake brewing. Dileka ionized water promotes mild fermentation during brewing and creates a good taste. Kubota Suiju is recommended in Sushi World!

Black Vinegar Factory

Black vinegar are produced by fermentation of rice, sugar and water. Good quality water determine the quality of the black vinegar produce. Dileka™ water used in the manufacturing of black vinegar enhanced the fermentation process.

Whiteness and fermentation process improved in making of flour cake with Dileka™ water. 

Experiment conducted using 3 different types of water, i.e. Dileka™ water, distilled water and pipe water. Results showed that the flour cake produced using Dileka water has better quality in terms of whiteness, fluffiness and sponginess.
